  • 18sThe rim inflates. That edge is the cornicione, and it is the part we judge ourselves on.

Two days of doing nothing, on purpose

Flavour comes from time, not yeast. We mix one batch a day, and when it is gone the ovens go off — on a Friday, usually before nine.
